<b><span style="color: black">Final processing of fish:</span></b> <br />
<span style="color: black">The four basic procedures used in the final processing of fish products are heating, freezing, controlling </span><b><span style="color: red">water activity</span></b><span style="color: black"> (by drying or adding chemicals), and irradiating. All these procedures increase the shelf life of the fish by inhibiting the mechanisms that promote spoilage and degradation. Each of these procedures also has an effect on the nutritional properties of the final product.</span> <br />
<br />
<b><span style="color: black">Controlling</span></b><b><span style="color: red">water activity</span></b> <br />
<span style="color: black">Reducing the </span><b><span style="color: red">water activity</span></b><span style="color: black"> of fish inhibits the growth of microorganisms and slows the chemical reactions that may be detrimental to the quality of the fish product. The control of </span><b><span style="color: red">water activity</span></b><span style="color: black"> in fish is accomplished by drying, adding chemicals, or a combination of both methods.</span> <br />
<br />
<b><span style="color: black">Curing</span></b><span style="color: black"> <br />
Curing reduces </span><b><span style="color: red">water activity</span></b><span style="color: black"> through the addition of chemicals, such as salt, sugars, or acids. There are twomain types of salt-curing used in the fish industry: dry salting and pickle-curing. In dry salting the butchered fish is split along the backbone and buried in salt (called a wet stack). Brine is drained off until the </span><b><span style="color: red">water content</span></b><span style="color: black"> of the flesh is reduced to approximately 50 percent (the typical </span><b><span style="color: red">water content</span></b><span style="color: black"> of fresh fish is 75 to 80 percent) and the salt content approaches 25 percent. In heavy or hard-cure salting, an additional step is taken in which warm air is forced over the surface of the fish until the </span><b><span style="color: red">water content</span></b><span style="color: black"> is reduced to about 20 percent and the salt content is increased to approximately 30 percent. Most dry-salted fish products are consumed in warm, humid countries or in areas that have few means of holding products in refrigeration or cold storage. <br />
In pickle-curing, fish are preserved in airtight barrels in a strong pickle solution formed by the dissolving of salt in the body fluids. This curing method is used for fatty fish such as herring.</span> <br />
<br />
<b><span style="color: black">Smoking</span></b><span style="color: black"> <br />
Traditionally, smoking was a combination of drying and adding chemicals from the smoke to the fish, thus preserving and adding flavour to the final product. However, much of the fish smoked today is exposed to smoke just long enough to provide the desired flavour with little, if any, drying. These products, called kippered fish, have short shelf lives, even under refrigeration, since the </span><b><span style="color: red">water activity</span></b><span style="color: black"> remains high enough for spoilage organisms to grow.</span> </span></div>

The control cabinet PC is equipped with top-performance components and is available in two versions: the C6640 with compact design, and the C6650 with up to two hard drives, built into removable frames, making the PC suitable for RAID applications.</p>
<p style="text-align: left">With the development of the C66xx series control cabinet Industrial PCs, Beckhoff again meets the demand for small dimensions, high flexibility and user-friendly access to all internal components. The series includes two versions with powerful Intel<span style="font-size: 12px; vertical-align: text-top">&reg;</span> Core&trade;2 Duo or Core&trade;2 Quad processors on a Beckhoff ATX motherboard.</p>
<p style="text-align: left">Measuring just 370 x 305 x 200 mm (14.6&quot; x 12&quot; x 7.9&quot;), the C6640 is the more compact Industrial PC in the C66xx series. All connections face upwards, so that the connection cables can be fed directly into the cable channel. Adding only slightly to the width and height, the C6650 is equipped with two hard drives built into removable frames, which together with the on-board RAID controller, form a RAID 1 system with two mirrored hard drives. This ensures high data security. The hard disks can be exchanged easily during operation.</p>
<p style="text-align: left">Three free PCI and three PCI Express x1 slots are available for plug-in cards with a length of up to 210 mm (8.3&rdquo;). Graphics and 10/100 Mbit Ethernet adapters are already available on-board, without taking up a slot. The RAM can be extended from 1 GB DDR3RAM up to 8 GB. The device can be equipped with a CD/DVD ROM, multi-DVD or Blu-ray multi-DVD drive. The C66xx series PCs are supplied with 100 to 240 V AC full range or a 24 V DC power supply unit.</p>
<p style="text-align: left">The housing design of the C66xx series ensures long-term compatibility with new PC components. <p class="bnews" style="text-align: left">With the CU8890, Beckhoff is expanding its range of Industrial PC accessories via a WLAN module that is ideal for industrial use. The USB-to-WLAN adapter enables wireless integration of Industrial PCs into the Ethernet network. With regard to its electromagnetic compatibility, the DIN rail mounted WLAN box complies with rigorous industrial standards making it suitable for use in harsh machine environments.</p>
<p style="text-align: left">The Beckhoff CU8890 supports the WLAN standard IEEE 802.11 b/g. An integrated DIN rail adapter allows convenient installation in control cabinets. When connected to an Industrial PC with USB port, the controller facilitates the fieldbus-neutral exchange of all UDP/TCP-based data and can be used both as an access point and as a client. Client drivers are available for Windows XP, Embedded Standard and Windows CE and, therefore, for all Beckhoff Industrial PC and Embedded PC series. Software drivers for Windows XP and Embedded Standard make it possible for the CU8890 to also be operated as an access point.</p>
<p style="text-align: left">The CU8890 features a reverse SMA plug, to which various radio antennas to suit the respective environment can be attached. Beckhoff offers a complete range of antennas and cables for the most diverse applications and conditions. Depending on ambient conditions, the free-field distance between two CU8890 modules may be up to 300 m. The user can choose between 11 channels in the 2.4 GHz band, whereby country-specific regulations must be adhered to.</p>

<p class="bnews" style="text-align: left">In addition to all common bus systems and I/O signals, the universal Beckhoff Bus Terminal system also supports data transmission via radio. The KM6551 wireless terminal enables various types of transmission, based on the IEEE 802.15.4 standard.</p>
<p style="text-align: left">The KM6551 wireless terminal supplements the extensive range of Bus Terminals. The compact construction with a width of only 24 mm and simple connection technology supports space-saving, fast mounting. The KM6551 exchanges data wirelessly at a gross rate of 250 kbit/s and therefore meets the requirements of industrial applications.</p>
<p style="text-align: left">The Beckhoff radio technology supports bidirectional data exchange between a master and one slave (peer-to-peer), a master and up to four slaves, and unidirectional data transfer from a master to n devices (broadcasting). Radio transmission takes place with 10 bytes of user data, independent of the bus system used. A diagnostic system integrated in the KM6551 enables monitoring of the radio link.</p>
<p style="text-align: left">The data exchange terminal uses the 2.4 GHz ISM band, which is available worldwide. A total of 16 channels are freely selectable for several transmissions in one application. Signals from other radio services, such as DECT, UMTS or GMS, do not interfere with the system; therefore, high availability is guaranteed. With a free line of sight, data can be transmitted over distances of up to 300 m and more.</p>
<p style="text-align: left">The KM6551 enables fast, highly flexible and mobile applications, which could not be achieved at all or only at great expense using cable connections. The elimination of cables and sliding contacts not only reduces wear, but also cost. Users do not need to &ldquo;rethink&rdquo; with regards to the operation and maintenance of the system; the process image remains identical from their point of view.</p>
